Broiler Barbecue Rabbit



There are a few things to know about cooking Rabbit. The majority of recipes call for long cook times at a lower heat.
As this was my first time cooking rabbit I turned to the BEST source I could think of.
My Grandma's old Modern Encyclopedia of Cooking circa 1947.
                   
                         Broiler Barbecued Rabbit

1 dressed rabbit, 1 1/2 lbs                       1/8 tsp pepper
2 cups cold water                                     1 tsp sugar
2 tsp salt                                                   1 tbsp lemon juice
1/4 cup butter, melted                             1 tsp Worcestershire sauce
4 tsp grated onion                                   1/4 c water
1 tsp salt

Start broiler oven 10 min before baking. Set to mod hot (350F).
Clean and wash the rabbit thoroughly. Cut into serving pieces place in bowl, cover with cold water and add salt (first units of water and salt).
Soak 1 1/2 hours. Drain, pat dry with paper towels. Melt butter in saucepan, remove from heat, add remaining ingredients and beat thoroughly.
Dip rabbit pieces in sauce and arrange on aluminum foil-lined shallow pan and place in broiler 3 inches from heat source.
Broil 30 min, basting with remaining sauce every 10 min.

After top side is well browned, turn rabbit over increase heat to 375F and broil another 40 min, basting frequently.
Increase heat to 400F and broil 15 minutes so that meat brown richly. Remove to platter, pour remaining sauce over rabbit and serve with rice.

Now I'm not that great at sticking to recipes. Due to time constraints I used all the methods and very few of the actual ingredients.
I had a 2.3 lbs rabbit, we soaked it for over 2 hours. Then I basted it with a store bought BBQ sauce mixed with melted butter.
After it was cooked, I heated extra BBQ sauce before drizzling it over the cooked meat and the white rice.

It was DELICIOUS!


I know I've stopped posting recipes for the last little bit and that truly is a shame since my cooking this last year has really taken off but I will try to post more of the unusual things I've been cooking!
For cooking rabbit the very first time this was a WIN!

Our Relationship to Food



Recently I have been made aware of a book titled, "Eat Right for your Type" meaning eating for your blog type. I have just started this fascinating read and I am willing to shop and eat for my type for at least two weeks - then we go camping and I will fudge a bit - but most likely will pick it back up.

Simply reading through their list of foods I need to avoid can easily explain why I have been eating "healthy" and still gaining weight. I am eating socially acceptable foods that my body is having a harder time processing.
I will be following the Blood group B diet as well as the O for my children. Not sure what my hubby is we may need to get him retyped.

At first glance I have to say this sounds very promising - also explains why many do great on hunter gather diets and others don't the "O"s fall into that grouping. Its also what they believe is the "root" blood type, the oldest of all of them.

I will be honest, opened and as impartial as I can be while on this diet. I will give FACTS, as well as show my recipes.

I promise not to make this a Do it My Way food blog. If this becomes a lifestyle choice I will let you know!

Spicy Sausage Wonton Stars Recipe

Ingredients

* 1 pound bulk spicy pork sausage
* 2 medium carrots, finely shredded
* 1 medium onion, finely chopped
* 1/2 cup finely chopped sweet red pepper
* 1/2 cup finely chopped green pepper
* 1 cup (4 ounces) finely shredded pepper Jack cheese
* 1 cup (4 ounces) finely shredded cheddar cheese
* 1/2 cup sour cream
* 2 garlic cloves, minced
* 1 teaspoon lemon-pepper seasoning
* 36 wonton wrappers
* 1 tablespoon butter, melted
* 1/8 teaspoon garlic powder
* Sliced cherry tomatoes, optional

Directions

* In a large skillet, cook sausage over medium heat until no longer pink; drain. In a large bowl, combine the sausage, carrots, onion, peppers, cheeses, sour cream, garlic and lemon-pepper.
* Press wonton wrappers into miniature muffin cups coated with cooking spray. In a small bowl, combine butter and garlic powder; brush over edges. Bake at 350° for 8-9 minutes or until lightly browned.
* Spoon sausage mixture into cups. Bake 5-7 minutes longer or until heated through. Garnish with tomatoes if desired. Yield: 3 dozen.



Special Sesame Chicken Salad Recipe
Ingredients

* 1 package (16 ounces) bow tie pasta
* 1 cup canola oil
* 2/3 cup white wine vinegar
* 2/3 cup teriyaki sauce
* 1/3 cup sugar
* 1/2 teaspoon pepper
* 3 cans (11 ounces each) mandarin oranges, drained
* 2 cans (8 ounces each) sliced water chestnuts, drained
* 2 cups cubed cooked chicken
* 1-1/3 cups honey-roasted peanuts
* 1 package (9 ounces) fresh spinach, torn
* 1 package (6 ounces) dried cranberries
* 6 green onions, chopped
* 1/2 cup minced fresh parsley
* 1/4 cup sesame seeds, toasted

Directions

* Cook pasta according to package directions; drain and place in a very large bowl.
* In a small bowl, combine the oil, vinegar, teriyaki sauce, sugar and pepper. Pour over pasta and toss to coat. Cover and refrigerate for 2 hours.
* Just before serving, add the remaining ingredients; gently toss to coat. Yield: 22 servings (1 cup each).


Wonton Kisses Recipe
Ingredients

* 24 milk chocolate kisses
* 24 wonton wrappers
* Oil for frying
* Confectioners' sugar

Directions

* Place a chocolate kiss in the center of a wonton wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Moisten edges with water; fold opposite corners together over candy kiss and press to seal. Repeat.
* In an electric skillet, heat 1 in. of oil to 375°. Fry wontons for 2-1/2 minutes or until golden brown, turning once. Drain on paper towels. Dust with confectioners' sugar. Yield: 2 dozen.

Coconut Cocoa and more

I have to tell you this is an amazing tea! It has a rich yet smooth flavor that doesn't fade or loose its attractiveness as the cup cools.
Naturally caffeine free, this is a great diet help especially during the holidays! You know when your co-worker loads the large candy bowl with tempting treats that fill the air beckoning to you. Instead of giving in, make a cup of Tea!

This is another hidden gem that I picked up at IKEA. If you have an IKEA near you I would highly recommend you run there and by this!
